Moving Away From Tips

As of Monday (July 11th), we are starting something new at Tutta Bella Neapolitan Pizzeria. We’ll be eliminating tipping at all of our locations. Some recent court rulings don’t allow restaurants to share tips with kitchen staff and we didn’t want to disrupt our current collaborative work environment (that includes a tip pool), so we’ve implemented a service charge that meets the new requirements. In place of gratuity when dining in, a 20% service charge will be added to each guest check. Takeout orders will include a 10% service charge. 100% of these funds go to a revenue-share bonus program and benefits for our hourly staff.

A Message to Our Guests

Since we opened in 2004, our hourly employees have participated in a tip pooling compensation model that promotes team collaboration and shared responsibilities for providing stellar guest experiences. Recently, the U.S. Court of Appeals for the Ninth Circuit ruled that employers are prohibited from including back-of-the-house staff in tip pools, so we needed to consider other options. To stay true to our culture and respond to government regulations, as of July 11, all Tutta Bella Neapolitan Pizzeria locations will be implementing a service charge and eliminating tipping.

After much evaluation and internal discussions, we have decided that the best way to continue this successful collaborative work environment and to help support a sustainable business model was to move to a service charge. 100% of these funds are collected and distributed as wages and benefits to our hourly restaurant employees — as part of our revenue-sharing bonus program. This model is growing in popularity with restaurants in the greater Seattle area and has always been the norm in Europe.

This service charge allows us to compensate our employees effectively and continue to offer the many benefits that we provide, including:

• Revenue-share bonus program
• Paid time off
• Medical benefits (health, vision and dental)

Our service charge is designed to continue to incentivize our staff to offer welcoming, warm service and excellent food for our guests at every visit.
